Utilization of food waste is a scourge of mankind. Huge volumes of daily production of products for different purposes lead to the formation of a large amount of food biological waste. The accumulation of such waste without disposal in the open space leads to an increase in the risk of epidemics, is a direct threat to the environment and human health.

According to the definition given in GOST 30772-2001 " resource Saving. Waste treatment. Terms and definitions", food waste is food that has lost all or part of its original consumer properties in the processes of their production, processing, use or storage.
According to the Federal waste classifier, food waste is classified as low-hazard or practically non-hazardous waste. But at the same time, there are strict requirements for the frequency of removal of such waste. In the temporary storage of waste should be excluded the possibility of decay and decomposition. Therefore, the shelf life in the cold season (at a temperature of-5 °C and below) should be no more than three days, in the warm time (at a plus temperature above +5 °C) no more than one day (daily export) (p. 2.2.1 SanPiN 42-128-4690-88 "Sanitary rules of the maintenance of territories of inhabited places").

The government of each region of the Russian Federation approves the Regulations, according to which the disposal of food waste should be carried out. The standard Regulations on the handling of food residues include the following main provisions:
- Export of unsuitable for the use of food and its processing, and also utilization and use as a forage for cattle shall be performed according to Veterinary and sanitary rules which were approved by the Chief veterinary inspector of Russia.
- Only special containers equipped with tight-fitting lids shall be used for waste collection.
- Containers for temporary storage of food residues may not be used for other purposes. Containers should be emptied daily and then rinsed with water.
